Abstract

Sosis parape is an emulsified skipjack tuna sausage developed at the Practical Kitchen Laboratory of Politeknik Pariwisata Makassar as an applied culinary product based on bumbu parape. This paper documents the product development process, including formulation, sensory target design, production control, and preliminary hedonic testing. The product was formulated with skipjack tuna (Katsuwonus pelamis) as the main protein source, supported by cooked bumbu parape, tapioca starch, sago starch, egg white, iced water, neutral oil, and selected seasonings. The production process emphasised cold fish batter handling, phased chopping, casing, steaming to a minimum core temperature of 63°C, rapid cooling, and vacuum packaging. The sensory design targeted an even golden-brown colour, cooked shallot and spice aroma, firm-elastic texture, balanced savoury-sweet-acidic flavour, and moist mouthfeel. Preliminary hedonic testing involving 20 trained panellists produced an overall mean score of 4.45 on a five-point scale, with flavour receiving the highest mean score of 4.65. These findings indicate that Sosis parape has potential as a standardised seafood-based culinary product that translates Makassar’s regional flavour system into a technically controlled sausage format. This work should be read as a rigorous applied culinary product development report; further analyses of proximate composition, water activity, pH, total plate count, and validated shelf-life are required before broader commercial claims can be made.
