Abstract

ABSTRACT PUTRA SAMSUDDIN, 2024. Utilization of Avocado Fruit in Making Donuts. Final Project of Culinary Arts Study Program, Department of Hospitality, Makassar Tourism Polytechnic. Advisor: Dr. H. Muhadjir Suni, S.Sos., M.Pd and Dr. Syamsu Rijal,S.Sos., M.Pd., CHE This study aims to determine the process of making donuts from avocado as a substitute for butter and evaluate or assess the final characteristics of the product. The research method used is quantitative, by taking an experimental approach, and utilizing existing data sources such as primary and secondary data. Data was obtained by conducting questionnaires through hedonic sensory tests to see the level of liking for the characteristics of avocado donuts. Analyzing various techniques and methods in making donuts so as to obtain the optimal recipe and final result. The findings showed that avocado can replace the function of butter in doughnuts, as it has almost the same content. This study found the right avocado donut recipe that produces the ideal final characteristics. The result of this research suggest that avocado fruit can be used as a substitute for butter in making donuts, because the content is the same, resulting in characteristics that are considered ideal.
