Abstract
Reviana Verdianti, 2024. Cassava Yoghurt Tape. Final Assignment for the Culinary Arts Study Program, Hospitality Department, Makassar Tourism Polytechnic. Supervisor Muhammad Anas, SE., MM. & Muhammad Musawantoro, S.Pd., M.Pd. This research aims to investigate two main objectives: (1) the process of making cassava tape yoghurt and (2) the final characteristics of cassava tape yoghurt. To achieve these objectives, a pure experimental approach was utilized, focusing on both primary and secondary data sources. Data were collected using observation, questionnaires, and documentation techniques, and analyzed descriptively using percentage-based methods. The study involved examining the production process of cassava tape yoghurt to understand its flavor profile and textural characteristics. The experimental approach provided insights into how cassava tape, as a flavoring ingredient, influences the overall quality of the yoghurt. The research involved a comprehensive analysis of how the addition of cassava tape affects the taste, aroma, and texture of the final product. The results indicate that the use of cassava tape as a flavoring agent in yoghurt yields a pleasing taste. Cassava tape yoghurt has a distinct cassava tape aroma and a texture that resembles that of Greek yoghurt. The flavor of the yoghurt combines the sweet and sour notes of cassava tape, aligning with the researchers' expectations. Observation of the liking test results showed that the majority of respondents responded positively to cassava tape yoghurt, with YTS 2 receiving a higher level of preference compared to YTS 1 based on percentage analysis.
