Abstract

Muhammad Khaerul, 2024. Making Dry Rub Based on Palekko Seasoning. Culinary Arts Study Program, Department of Hospitality, Makassar Tourism Polytechnic. Supervisor Muhammad Anas, SE., MM., CHE. & Lily Dianafitry Hasan, S.Sos., MM., CHE. This research aims to: (1) Knowing how the process of making dry rub palekko seasoning with the dehydrate method (2) Knowing how the final result of the application of dry rub palekko in poultry dishes. The research methodology used in this research is qualitative using an experimental approach, using primary data sources and secondary data. Data were collected through observation, and an experimental design was developed to analyze various aspects: preparation technique, drying method, manufacturing process, and application. There are three cooking methods in the application of palekko spice dry rub, namely pan siered, foil-wrapped smoke and stewing methods. The final result obtained in this research is the application of dry rub seasoning palekko using the stewing method is a method that gives results that closely resemble the characteristics of the original Palekko. This research shows a new innovation in the development of Palekko seasoning dry rub category. In conclusion, palekko seasoning can be innovated into dry rub, contributing to the development of traditional dishes in culinary applications.
