Abstract
Ningsih Kartika Tolampi. 2024. Use of Chia Seed in Making Toast Bread. Final Assignment for the Culinary Arts Study Program, Hospitality Departement, Tourism Polytechnic of Makassar. Supervisors Dr. H. Muhadjir Suni., S.Sos., M.Pd & Dr. Syahrial, S.Sos., M.AP., CHE. This research aims to: (1) Understand the process of making toast bread using chia seeds as an egg substitute, and (2) Determine the characteristics of toast bread produced using chia seeds as an egg substitute. This study employs a pure experimental research approach. The types and sources of data used in this research are primary and secondary data, with data collection techniques involving the distribution of sensory evaluation questionnaires. The collected data were then analyzed using descriptive percentage techniques. The research results indicate that the use of chia seeds in the preparation of toast bread as an egg substitute significantly impacts the final characteristics of the toast bread, particularly in terms of color and texture. Chia seeds can be used as an alternative food ingredient to replace or substitute eggs. Keywords: chia seed, toast bread, eggs
