Abstract

CHATERINE CHANDRA, 2024. Utilization of Black Honey in Making Nougat. Culinary Arts Study Program, Hospitality Department, Makassar Tourism Polytechnic. Supervisor Muhammad Musawantoro, S.Pd., M.Pd & Nur Salam, S.Sos., M.Pd., CDM-FL. This research aims to find out the stages and recipe for making nougat using black honey. Apart from that, it is also to find out the final characteristics of nougat products made from black honey. In this research, the research approach used was experimental with qualitative research methods and utilized primary and secondary data sources. This research data was collected through interviews, with the results of these interviews using descriptive or narrative data analysis techniques, which were used to determine the characteristics of the final results of the black honey nougat product. The results of this research show that the use of black honey in making nougat can change the characteristics of the nougat, and the results of this product can become a new flavor variant in the nougat type because the final result of the black honey nougat product is close to the ideal criteria desired by the researchers even though the results of the nougat product Black honey is not perfect because the texture of the nougat product melts easily. However, this research could provide a new variant in nougat products by utilizing local food sources. Keywords: Nougat, Black Honey
