Abstract

ABSTRACT FAHRI HAIKAL RAHMAN, 2024. Making Jelly Candy from Carrot (Daucus Carota L.). Final Project of Culinary Arts Study Program, Department of Hospitality, Makassar Tourism Polytechnic. Advisor: Dr. H. Muhadjir Suni, S.Sos., M.Pd and Muhammad Muswantoro, S.Pd., M.Pd This study aims to determine the manufacturing process and which type of carrot is good between Berastagi carrots and Malino carrots to be used as a jelly candy product and find out how the characteristics of the resulting product and provide new innovations in the food industry. The research methodology used is quantitative using an experimental research approach, utilizing data sources in the form of primary and secondary data. Data was collected through sensory questionnaire tests to predetermined panelists, and experimental design was used to analyze how to determine the right process in making jelly candy from carrots so as to produce the right recipe and good characteristics. The findings showed that the best type of carrot used in making jelly candy was Malino carrot and the resulting characteristics of Malino carrot jelly candy met the ideal standard. The result of this research suggest that the type of carrot that is good enough to be produced into jelly candy is malino carrot, because the carrot produces ideal characteristics and the test results through questionnaires to panelists show results that are quite liked by people.
