Abstract

Jordhy L Hatimura. 2024. Utilization of Moringa Leaf Powder (Moringa Oleifera) in Making Traditional Snacks. Final project of the culinary arts study program at the hospitality department of the Makassar tourism polytechnic. Supervisor Nur Salam, S. Sos., M.Pd, CDM-FL & Dr. Syamsul Rijal, S.Sos., M.Pd., CHE. This research aims to: (1) Knowing the good processing in making traditional snacks with the addition of moringa leaf powder (2) Knowing the characteristics of various traditional snacks with the addition of moringa leaf powder. In this study the method used was the experimental method. And the types of data sources used in this study are primary data and secondary data using data collection techniques, namely: experimentation, documentation and questionnaires and using data analysis in the form of quantitative descriptive analysis. The results of the research conducted showed that the addition of moringa leaf powder resulted in changes in the characteristics of traditional snacks. In klepon, the texture remains chewy and dense with a darker green color. The distinctive aroma of moringa leaves was slightly smelled and tasted moringa leaves in the aftertaste but did not dominate the sweetness of the brown sugar and grated coconut filling. In the rolled omelette, the chewy and soft texture was maintained with a paler green color and a less dominant aroma and taste of moringa. Whereas in the steamed sponge cake, the soft and fluffy texture was maintained with a fairly dark green color, the aroma of moringa was smelled but not disturbing, and the taste of moringa in the aftertaste was not too disturbing.
